Female entrepreneur serving up dreams and determination with new distillery

Christi Lower isn’t just a local business owner excited about creating a new space in the exciting and vibrant city of Plymouth downtown area. She is truly a trailblazer, serving up a testament to the power of dreams and determination – one exceptional blend at a time.

Lower opened The Highline Room – Plymouth at 330 South Main Street on May 31, with the hope of sharing that feeling you get when you discover something incredible.

“You know that feeling you get when you discover something that you didn’t know you could do, or that you didn’t know existed, that you just want to bask in the awe of just how special it is,” she said. “That feeling is everything. It’s the inspiration for all we do.”

Highline Spirits launched in September 2023, and they opened their first tasting room in Dexter in October 2023.

“It is important to create a welcoming space for all individuals to explore and understand what Highline Spirits is all about,” she said. “The Highline Room – Plymouth is a natural extension of our growing distillery.”

The Highline Room – Plymouth serves up perfectly crafted cocktails from their seasonal menu, allowing guests to immerse themselves in the rich flavors of awe-inspiring spirits. Among the amazing choices is Highline’s American Whiskey (Pure. Beautiful. Awe-inspiring); Triple Rye Whiskey (triple the flavor – perfected through the art of proofing); Straight Bourbon Whiskey Blend (an exceptional blend made to savor); and Straight Kentucky Whiskey (some things, like this whiskey, are perfect all by themselves).

Adding a special flavor to the incredible taste of the moment is the atmosphere and vibe of the 1,300-square-foot space. Highline Spirits, set against the backdrop of a beautiful, historic building restored to its 1893 glory, was best known around town as Wiltse's Pharmacy. Maintaining and preserving that history was important to Lower when she set out to create her “cozy and intimate space.”

“The storefront windows have been largely maintained, the pharmacy mortar and pestle floor inlay has been protected and maintained and the existing neon pharmacy sign is restored and reinstalled in the space,” she said. “The historic nature of the building is a nod to both my history as a medical provider and a nod to the prohibition-era whiskey prescriptions.”

Lower, who was born in Plymouth, is very excited to be a part of downtown.

“Plymouth is a vibrant community with an exciting downtown area,” she said. Highline Spirits is actively coordinating pop-up guest chefs and live music. They also offer craft cocktail classes that are now live on their website (highlinespirits.com) and will be scheduling Sip and Learn: Whiskey primer classes as well as a Single Barrel Select for The Highline Room – Plymouth.

Lower envisioned a fully transparent spirits company that wasn’t bound by tradition, history or heritage. Instead, she was driven by culture, art, diversity, and above all, excellence. This is reinforced by the spirits winning several high-profile awards in the last nine months.

“Here’s to the women who dare to dream, who dare to disrupt and who dare to do it anyway,” she said.

And here’s to Christi, whose story is a toast to every individual out there breaking down barriers, challenging norms and redefining the rules of the game. And this is just the beginning.
